Breakfast Pie

 Simple, delicious, & filling start to the day.
  • 6 eggs
  • 1# breakfast sausage or bacon cooked
  • Salt & pepper to taste
  • Chopped onion
  • Pie shell

Mix ingredients well and pour into pie shell.  Bake at 375 degrees for 20 minutes or until center is firm. 

Ham Egg Loaf  
  • 6 eggs
  • 3/4 c. milk
  • 1 tsp mustard
  • 1 1/2 c. flour
  • 3 tsp baking powder
  • 1/2 tsp salt
  • 6 cooked bacon strips, crumbled
  • 1 c. cooked ham, diced
  • 4 oz cheddar cheese, cubed
  • 4 oz Monterey Jack cheese, cubed 
  • Beat eggs one minute until frothy. 

    Add milk & mustard. 

    In seperate bowl, combine flour, baking powder, and salt.  

    Beat into egg mixture until smooth. 

    Stir in bacon, ham, and cheese. 

    Pour into 1 large (or 2 small) greased & floured loaf pan(s). 

    Bake at 350 for 30 minutes (small pans) or 60 minutes (large pan) until golden brown and toothpick comes out clean.  Cool 10 minutes, loosen edges, slice, & serve.

  • This is a great way to use leftover bacon & ham! 
  • Breakfast Puffs 
     ***8 individual puffs*** 
      
  • 1/2 lb cooked bacon
  • 1/2 lb cooked sausage
  • 8 eggs
  • 1/4 C. Milk
  • Butter
  • Salt & pepper to taste
    Coat muffin cups with butter or cooking spray. Lay 1/2 piece of bacon in bottom of each cup. Beat milk, eggs, salt & pepper. Put 1/4 C. of egg mixture in each cup. Add 1 Tbsp of sausage to top of each cup. Bake at 325 for 15-20 minutes until fluffy and not runny in the center. Do not overcook.

  • Made to Order Omelet
    • 2 eggs
    • 1 TBS water
    • Salt and pepper to taste 
    • 1 TBS cooked meat (ham or breakfast sausage)
    • Extras (onions, peppers, asparagus)
    • 1 TBS cheddar cheese
    Warm small fry pan over medium heat. 
    Whip eggs with water, salt, & pepper. 
    Coat pan with minimal amount of butter. 
    Slowly pour eggs into side of tilted pan & slowly coat bottom to avoid air bubbles. 
    Sprinkle meat, cheese, and desired extras over cooking eggs. 
    When cooked almost through, loosen edges & slide spatula under omelet, folding omelet in half, and moving to plate. 
    Top with more cheese if desired

    Fried Egg Sandwiches
    *** Take grilled cheese to a higher level*** 
    Amounts given are per sandwich
    • 2 Slices of bread
    • 1 pat butter
    • 1 egg 
    • 1 slice cheese (Velveeta, Swiss or Cheddar)
    • 1 Tbsp diced onions & peppers
    Butter one side of each bread slice.  Place one slice, buttered side down on skillet.
    Layer remaining ingredients. Top with 2nd bread slice, butter side up.
    Flip after 1 minute or when golden brown.  Grill until 2nd side is golden brown.
