Steak & Black Beans ***Quick & Easy ***15
minutes to table . - 2# Round Steak (cut in strips) or Stir Fry Strips
- 2 Tbs Olive Oil
- 30 oz can Black Beans
- 1 can Beefy Mushroom
Soup or Beef Gravy
- Salt to taste
- Cayenne Pepper or
Red Pepper to taste
Stir fry steak in olive oil until browned. Add beans, soup, salt, & pepper. Simmer 5-10 minutes. Variations: - serve over rice - add saurkraut upon serving

Preheat broiler or grill Sprinkle one side of steak with seasonings Grill or broil on one side for 3 minutes Flip and season other side Continue cooking until desired doneness
Steak & Shitake Fried Rice - 1 c. cooked rice
- 1 Tbs olive oil
- 2 eggs, lightly beaten
- 2 Tbs ginger or 1 Tbs fresh ginger, minced
- 2 cloves minced garlic
- 8 oz steak, cubed or stir fry steak
- 1 c. shiitake* mushrooms,
sliced
- 1 c. sliced carrots
- 1 c. snow peas
- 1/4 c. soy sauce
- 2 tsp sesame oil
- 1/2 c. sliced scallions
Heat olive oil in skillet over medium heat. Add eggs 1-2 minutes until firm. Transfer eggs to cutting board. Slice and add to rice. Cook ginger & garlic in
skillet 1 minute. Add steak and cook 3-5 minutes on medium-high heat. Add mushrooms, carrots, and peas. Cook 3 minutes until mushrooms are soft. Add
soy sauce & sesame oil. Heat to simmer. Stir in rice until warm. Add eggs
& scallions. Remove from heat. Serve. *or substitute any mushroom variety
Tenderized Round Steak Crock Pot · 3 potatoes, quartered · 2 onion, chopped · 4 carrots, peeled and sliced into 1-2 inch pieces ·
2 pounds boneless round steak · Salt, pepper, garlic powder to taste (1 tsp each?) ·
1 can condensed cream of mushroom soup · 1 cup water Layer potatoes, onions, & carrots in
slow cooker. Cut steak into serving sized pieces & place on vegetables. Mix seasonings, soup, and water. Pour
over meat. Cook on low 7-10 hours.
Steak Marinade
Thanks Melanie from Mazon - this one is delicious! - 2T lemon juice
- 1/4 cup worcestershire plus 1t, divided
- 2T olive oil
- 1/4 cup minced onion
- 3/4 t salt
- 1 clove minced garlic
- 3lbs sirloin steak
- 1T parsley
- 2T butter
Combine lemon juice,1/4 c worcestershire sauce, oil, onion, salt, & garlic. Put steak in container or large bag and pour in marinade. Let set for 2 hours. Grill steak 7-10 min on each side. Melt butter and
mix with parsley and 1t worcestershire and pour over steak before serving.

Ground Beef
Impossible Cheeseburger Pie - 1 lb ground beef
- 1 cup onion, chopped
- 1/2 tsp salt
- 1 cup shredded Cheddar cheese
- 1 cup milk
- 1/2 cup Bisquick
style baking mix
- 2 eggs
Preheat oven to 400 degres. Cook ground beef, onion, and salt. Drain if needed. Spread in 9" greased
pie plate. Sprinkle with cheese. Mix milk, baking mix, & eggs.
Pour into plate. Bake 25 minutes until knife inserted in center comes out clean.

- 2 tsp sea salt
- 3 cups water
- 2 cloves garlic
- 1 cup diced green peppers
- 28 oz diced tomatoes
- 12 oz tomato paste
- 15 oz kidney
beans
- 15 oz chili beans
- 15 oz white beans
- 1 tsp cumin
- 1 tsp basil
- 1 tsp black or cayenne pepper
- 1 Tbs chili powder
Brown ground beef with onions and salt. Add remaining ingredients. Simmer 20 minutes or crock pot on low for 8 hours. Variations: - dip whole grain rolls in chili - top
with cheddar cheese & diced onions
Mom's Meatloaf We aren't traditionally meatloaf eaters, but this one is really good! - 1
can tomato soup
- large onion, chopped
- 1 egg
- 1/3 c. oatmeal
- 1 1/2 lbs hamburger
- salt
Mix and bake at 350 degrees for 35 minutes until no longer wet in center. Top with mashed
potatoes and velveta cheese. Return to oven to melt cheese.
Spicy Lime Meatballs This
spicy, intriguing flavor will bring you back for more. Meatballs: - 1 lb ground beef
- 1 egg
- 1/4 c. oatmeal
- 1 tsp salt
- 1 clove minced garlic
- 1/4 tsp cayenne pepper
- 2 tsp curry powder
- 1/4 c. finely chopped onions
Sauce: - 1/2 c. milk
- 2 cloves garlic
- 2 Tb lime juice
- 1-2 tsp curry powder
Mix ground beef, egg, oatmeal, seasonings, and onions. Form into 40 small meatballs using small ice cream/cookie
scoop. Cook in large skillet over medium-high heat, turning often, until brown. Mix
milk, garlic, lime juice, and curry. Pour in skillet and stir into meatballs. Serve over fried rice.

- 1 pkg taco seasoning
- 1/2 cup water
- 1 can refried beans
- 2 cups cooked rice
- 1 pkg taco seasoning
- 1 cup cheddar cheese
Cook ground
beef in skillet. Drain if needed. A dd seasoning and water; simmer
on low. Mix rice, seasoning, and water until no liquid remains. Warm
refried beans, adding water until correct consistancy. Dish meat, rice, & beans as 3 sections in soup bowls.
Top with cheese. Serves 4.

in the garden now!*** - 1 pound ground beef
- 2 med onions, sliced or dices
- 2 green peppers, diced
- 2 cups zucchini / yellow squash (don't have to peel)
- 3-4 tomatos, chopped, or 1/2 quard of stewed tomatos
- salt & pepper
to taste
Simmer till tender about 30-45 minutes. Serve with fresh
salad on the side. ** Serves 4-5, easy to double ** ** Make extra and can to eat through winter, great
way to "store" zucchini ** ** I added a Jalapeno pepper, finely chopped. It added a great kick
