Pork

Apple Onion Pork Chops
* Very tender.  Full flavor. 

* Begin about 1 hour before serving.
  • 4 pork chops
  • 2 Tbs olive oil
  • salt & pepper to taste
  • 2 onions, sliced
  • 2 tart apples, pealed & sliced
  • 1/4 cup cider vinegar
  • 1/2 cup chicken broth

Salt & pepper pork chops, brown on both sides in olive oil over medium heat.

Remove & set aside.

Cook onions & apples in remaining oil & meat juices 20 minutes over low heat.

Add browned pork chops & vinegar to skillet until simmering.

Stir in broth.  Simmer 20 minutes

 
Breakfast Pie
Simple, delicious, & filling start to the day.
  • 6 eggs
  • 1# breakfast sausage or bacon cooked
  • Salt & pepper to taste
  • Chopped onion
  • Pie shell

Mix ingredients well and pour into pie shell.  Bake at 375 degrees for 20 minutes or until center is firm. 

 
Hawaiian Ham Steaks
2 ham steaks
2 Tbs brown sugar
1 Tbs Dijon mustard 
1 can pineapple slices
 
Bake ham at 375 degrees for 10 minutes.
Mix sugar and mustard.  Spread over ham.
Top with pineapple.
Return to oven until fully cooked - 5-15 minutes depending on thickness.
 

Ham Egg Loaf  
  • 6 eggs
  • 3/4 c. milk
  • 1 tsp mustard
  • 1 1/2 c. flour
  • 3 tsp baking powder
  • 1/2 tsp salt
  • 6 cooked bacon strips, crumbled
  • 1 c. cooked ham, diced
  • 4 oz cheddar cheese, cubed
  • 4 oz Monterey Jack cheese, cubed
    Beat eggs one minute until frothy. 
  • Add milk & mustard. 

    In seperate bowl, combine flour, baking powder, and salt.  

    Beat into egg mixture until smooth. 

    Stir in bacon, ham, and cheese. 

    Pour into 1 large (or 2 small) greased & floured loaf pan(s). 

    Bake at 350 for 30 minutes (small pans) or 60 minutes (large pan) until golden brown and toothpick comes out clean.  Cool 10 minutes, loosen edges, slice, & serve.

  • This is a great way to use leftover bacon & ham!

    "Whoops, the Lid Fell Off"
     Spiced Pork Shoulder
    • Enough whole potatoes to cover the bottom of a slow cooker (any kind, skins on)
    • 1/4 cup balsamic vinegar
    • chili powder 
    • salt
    • lots of cinnamon
    • red pepper (optional)
    • 3 pounds pork shoulder
       

    Wash potatoes and place on bottom of slow cooker. 

    Pour vinegar over. 

    Sprinkle salt, chili powder, red pepper, and a little cinnamon on top.
    Place pork shoulder on potatoes. 

    Sprinkle with salt, chili powder, and whoops, the lid came off the cinnamon, so coat the meat liberally with that (about 1/3-1/2 jar of cinnamon...it was a lot!)

    Cover and cook on high for about 2 1/2-3 hours.  Turn to low for 2 hours or until you're ready to eat. 
    Serve meat and potatoes with juices poured over top. 
    Good with a side of homemade kimchi. 
    Could also be pulled and eaten as a sandwich with kimchi or coleslaw on top.

    Sweet & Sour Pork Patties
    ·         6 ground pork patties
    ·         1 small onion
    ·         1 jar sweet and sour sauce
    ·         4 cups cooked rice
    Brown patties & remove from skillet.
    Add & fry chopped onions until brown
    Add patties to onions along with sweet & sour sauce until warm. Serve over rice.

    Farmer's Skillet

    • 1 pound breakfast sausage
    • 1 potatoes, cubed
    • 1/4 cup onion, diced
    • 1/8 cup green pepper, diced
    • 1 cup cheddar cheese, shreaded

    Brown sausage in skillet over medium high heat.  Add potatoes, onions & peppers until potatoes are cooked.  Remove from heat. 

    Gently  stir in cheddar cheese. 


    Oranged Pork Steaks
    * It doesn't get any easier than this!
    • 2 pork steaks or chops
    • 1/4 cup orange juice concentrate

    Paint orange juice on pork. 

    Refridgerate at least 30 minutes or all day.  

    Bake at 325 for 20 minutes or until cooked in center.

    Pork Perfection
    ***You've never tasted pork steaks so tender!
    ***45 minutes - stovetop - one pan.
    • 1 Tbs  Olive Oil
    • 2 Pork Steaks, cut in strips
    • 1 Tb Soy Sauce
    • 1/2 tsp Cayenne Pepper or 1 tsp Black Pepper
    • 1 clove Garlic or 1/2 tsp Garlic Powder
    • 1 large Yellow Onion, sliced thin
    • 8 oz. Mushrooms, halved

    Stir fry pork in olive oil until cooked no longer pink.

    Add soy sauce, pepper, & garlic.

    Simmer on medium-low for 30 minutes, stirring occasionally.

    Add onions & mushrooms.

    Simmer 5-10 minutes until onions are tender.

     

    Super Easy Pulled Pork  
  • 2 lb pork tenderlion
  • 12 oz root beer (organic/natural tastes best!)
  • 1 bottle barbeque sauce
  • Place tenderloin and root beer in slow cooker.  Cook on high for 6 hours.

    Drain root beer.  Shread pork with 2 forks.  Pour entire bottle of sauce on meat & stir to mix.

    Breakfast Puffs 
     ***8 individual puffs*** 
      
  • 1/2 lb cooked bacon
  • 1/2 lb cooked sausage
  • 8 eggs
  • 1/4 C. Milk
  • Butter
  • Salt & pepper to taste
    Coat muffin cups with butter or cooking spray. Lay 1/2 piece of bacon in bottom of each cup. Beat milk, eggs, salt & pepper. Put 1/4 C. of egg mixture in each cup. Add 1 Tbsp of sausage to top of each cup. Bake at 325 for 15-20 minutes until fluffy and not runny in the center. Do not overcook.
  • Wedding Pork 
     **This was a big hit at our son's wedding!
    • 3-5 lb Pork roast 
    Marinade 
    • 1/2 C soy sauce
    • 1 Tbsp Worcestershire sauce 
    • 1/2 C red wine vinegar 
    • 1 Tbsp brown sugar 
    • 2 Tbsp lemon juice
    • 1 tsp onion powder
    • 2 tsp garlic powder
    • 1 tsp dry mustard
    Mix marinade ingredients.
    Place roast & marinade in plastic bag or sealed container. Refrigerate overnight or all day.
    Bake at 325 for 60-90 minutes until center is no longer pink (or reaches 160 degrees).

    Slow Cooker Pork Ribs
     (Another great recipe from Lesli.) 
    • Balsamic vinegar
    • Barbeque sauce (Sweet & Spicy)

    Place ribs in slow cooker with vinegar for 2-5 hours on high.

    Add BBQ sauce. 

    Cook 4 hours on low.

    Ham Roast

    Your Applewood Smoked Ham Roast is a traditional style Ham. It is not pre-cooked.

    Thaw fully for 24 hours in the refrigerator. If the center is frozen still, it won't cook evenly - the outer will be dry and the center undercooked.
    If you are using a glaze during cooking, you can remove the rind/fat layer toward the end of cooking just before applying glaze.
    Cook to 160 degrees internal temperature. At 325 degrees, your ham should take 2 or 2 1/2 hours to cook.
    Wait 15 minutes before carving ham.

    Most often, the ham is carved and served with potatoes or sweet potatoes.
    Dripping can be used to make gravy, but be aware that the drippings may be very salty.

    Leftover Ideas

    You can use your ham, or the leftovers for any other ham recipe you desire:
    - ham and eggs for breakfast, or a breakfast casserole
    - warmed with pineapple for a Hawaiian flavor, goes well with rice
    - cube ham and mix with cubed boiled potatoes and cream sauce. Add frozen peas and bake until warm for a full meal casserole.
    - Ham & potato soup or ham & bean soup
    - Chilled ham on tossed salad
    - grind & mix with mayo & pickle relish for ham salad sandwiches
    - mix with mayo & serve over lettuce & cottage cheese
